Ingredients
⅓blockExtra Firm Tofu
1tbspSoy Sauce
1tspRice Vinegar
½tspPaprika
½tspItalian Seasoning
2slicesbread
¼Avocado
1tbsppreferred hot sauce and/or spread (opt.)*
1handfullettuce or spinach (opt.)
2spoonsSaurkraut (opt.)
Instructions
Start by slicing your tofu the long way into 2 or 3 slabs, about ½' thick. Place the tofu in a medium sized nonstick skilled over medium heat and add the soy sauce, rice vinegar, paprika, and Italian seasoning evenly over the tofu. Cook the tofu for 2-4 minutes on each side or until both sides are starting to get crisp.
Meanwhile, you can toast your bread if you prefer it toasted, and then mash on the avocado on one of the slices of bread. Layer on the lettuce or spinach(opt.), tofu, and saurkraut, and on the other slice of bread add the hot sauce and/or favorite spread

* I love using Cholula or Frank's Hot Sauce for this, and it also tastes amazing with tahini or hummus
