This amazing vegan tofu sandwich is super easy and quick to pull together and tastes absolutely delicious! It’s perfect for any time you’re in a rush or don’t feel like spending forever in the kitchen but still want something that tastes fresh, tasty, and homemade.

My favorite part about this incredible tofu sandwich (besides its amazing taste of course!), is that it all comes together in less than 10 minutes. Most of the time, when the afternoon rolls around I’m either really busy or just not in the mood to spend a ton of time in the kitchen so this has become one of my go-to lunch recipes when I have access to a kitchen.

The tofu takes about 2-4 minutes on each side to pan-fry, and during that time you can be toasting your bread (if you’re like me and like your sandwich bread toasted) and assembling all your favorite sandwich add-ins. Adding in an extra few minutes to get set up in the kitchen and to assemble your sandwich, that brings you to just 10 minutes spent on your amazing meal!

Taking it To-Go!

This sandwich also super convenient to prepare before school or work and is easy to pack away in my favorite reusable sandwich bags (more info here)! They’re super quick to prepare in the morning and are the perfect no-mess, no-hassle on-the-go lunch or dinner, it’s my favorite when I know I’m going to have lunch on the road or maybe during a hike or campout. This recipe is also super kid friendly, just customize the sandwich fix-ins to their liking and bam! you got the perfect school lunch that any kid would be happy to have.

If you are packing this with a lunch, I’d recommend adding in a mandarine or an apple to get some more vitamins and nourishment in there. I also love adding in a small handful of veggie chips on the side!

The Best Tofu Sandwich!

This sandwich is great for busy meals when you don't have tons of time to spare but want something fresh and yummy!

Ingredients

  • block Extra Firm Tofu
  • 1 tbsp Soy Sauce
  • 1 tsp Rice Vinegar
  • ½ tsp Paprika
  • ½ tsp Italian Seasoning
  • 2 slices bread
  • ¼ Avocado
  • 1 tbsp preferred hot sauce and/or spread (opt.)*
  • 1 handful lettuce or spinach (opt.)
  • 2 spoons Saurkraut (opt.)

Instructions

  • Start by slicing your tofu the long way into 2 or 3 slabs, about ½' thick. Place the tofu in a medium sized nonstick skilled over medium heat and add the soy sauce, rice vinegar, paprika, and Italian seasoning evenly over the tofu. Cook the tofu for 2-4 minutes on each side or until both sides are starting to get crisp.
  • Meanwhile, you can toast your bread if you prefer it toasted, and then mash on the avocado on one of the slices of bread. Layer on the lettuce or spinach(opt.), tofu, and saurkraut, and on the other slice of bread add the hot sauce and/or favorite spread

*  I love using Cholula or Frank’s Hot Sauce for this, and it also tastes amazing with tahini or hummus
