Heavenly Vegan Chocolate Chip Banana Bread

Heavenly Vegan Chocolate Chip Banana Bread

This vegan chocolate chip banana bread recipe is so moist, fluffy, and is perfect with breakfast or on its own. The sweet aroma and lovely crumble brings back so many memories of my childhood and baking along with my father and siblings, which is why I’m so excited about this recipe. At least for Americans, banana bread is the comforting breakfast, dessert, and/or snack that most of us remember baking at some point in our lives. Banana bread is a tried and true classic but I wanted to create my own vegan banana bread based on the recipe I used to prepare with my family.

But, not to worry, because this recipe tastes just as good as the original, and it’s made without any animal products! So, this vegan chocolate chip banana bread recipe is more eco-friendly, ethical, and healthy than the traditional one filled with oil, butter, eggs, and milk, with the extra bonus of tasting delicious as well.

Waste not your ripe bananas

This vegan chocolate chip banana bread is a PERFECT recipe to use up those ripe, brown, and/or spotty bananas that you likely have sitting on your counter. In fact, ripe bananas work better in this recipe then non ripe ones because they pack in more flavor and sweetness. While these bananas might not look so pretty, they will taste great in any baking recipe, and what better way to use them than in banana bread!

With ripe bananas you can also make oatmeal, banana muffins, banana pancakes, smoothies, and the list goes on. And in practically any baking recipe, you can replace two eggs for one large ripe banana that acts as a binder to hold the batter together. Or, if you want to use less refined sugar, ripe mashed banana is a great way to add sweetness while still using healthy and wholesome ingredients!

And, if you have read some of my other recipes or posts, you might have noticed that I dislike wasting any food. So, I’m always looking for different ways to use up scraps or food items that would otherwise get wasted. One of my favorites is my potato skin chips that are a delicious and easy way to use up those potato peels that would otherwise just be wasted when preparing soups, fries, mashes, and other things. The blog post that I have for my potato skin chips also details the damaging effect of food waste and why it is so important to reduce it.

How to Prepare (Super Simple!)

As a bonus, this vegan chocolate chip banana bread is a ONE BOWL recipe! Basically, you just throw everything into a mixing bowl, mix it together, and then put it in the oven to bake. That’s it! After gathering my ingredients, I was able to finish the batter in less than 5 minutes, so this is a perfect recipe even if you’re on a time crunch or don’t have much baking expertise.

This vegan chocolate chip banana bread would also be a great recipe to make with little ones as the recipe is simple, easy to follow, and requires little cleanup work. Or, if you prefer to have as little cleanup as possible, this is also a great recipe to keep the dirty dishes to a minimum.

Ingredients

  • 3 medium and ripe bananas
  • cup applesauce
  • ½ cup plant-based milk
  • 1 ¾ cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • cup vegan chocolate chips (opt.)

Instructions

  • Start by preheating your oven to 350° F and by greasing a loaf pan for the banana bread. Then, mash your three bananas in a large bowl and add in the applesauce and plant-based milk and stir everything to combine. Next, add in the flour, sugar, cinnamon, salt, baking powder, and baking soda and stir until there aren't any clumps in the batter before folding in the chocolate chips if using. Pour the batter into the loaf pan and bake in the over for 40-50 minutes.

Notes

  • To test if the banana bread is done, insert the tip of a knife into the middle of the loaf and make sure that there is no batter sticking to the knife when you pull it out.
  • Other toppings that would go well with this other than just chocolate chips are walnuts, slivered almonds, and dried fruit.
