It’s starting to get cold, and you know what that means – it’s time for yummy and cozy vegan fall soups! The leaves are turning red, the air is turning crisp, it’s time to bring out your cozy sweaters, put up your halloween decorations, and get into the spooky fall spirit, and what better way to do that then by cooking up some delicious fall-inspired dishes!

What’s in season?

You’ve probably already noticed the sudden influx of pumpkins and squashes in grocery stores, and that’s because harvest season is just getting started!

Sustainability is one of the primary reasons I turned to a vegan and plant-based diet, and even after making the transition, I still look for ways I can minimize the carbon footprint of my diet. One important aspect of that is shopping according to what’s in season in your area!

This is easy to google, and if you live in the West coast of the US like me, then you’ll find an abundance of apples, artichokes, beets, eggplant, Brussels sprouts, carrots, grapes, kale, beans, pears, persimmons, pomegranates, potatoes, sweet potatoes, pumpkins, and most winter squashes in your local grocery stores.

Buying according to what’s in season increases the likelihood that you are buying items from a local farmer and decreases the demand for imported goods that come with a higher transportation-related carbon footprint. At at this time of year, that means using all of this fresh and local produce in yummy vegan fall soup recipes!

For those of you who want to know more about the farms that you are purchasing produce from, visiting a local farmers market is a great way to talk to people representing small farms in your area. This also gives you a great sense of what’s in season in your immediate area and allows you to choose from some of the freshest produce available!

The following vegan fall soups use ingredients that are in season to decrease transportation related carbon emissions and to take advantage of the freshest, closes produce you have available in your area!

1. Sweet Potato Chili!

This is one of my all-time favorite recipes for the fall and winter season, and it’s one of the most iconic cozy vegan fall soups! It’s so cozy and filling, and there’s something so amazing about the sweetness of the sweet potato combined with the beans and spices. This is also a fantastic recipe for meal-prepping – it’s easy to make ahead of time, refrigerate or freeze, and then reheat in the microwave, plus it’s packed with plant-based protein, vitamins, and minerals!

2. Butternut Squash Soup

This decadent and classic butternut squash soup is sure to hit the spot when you’re craving something creamy and comforting! This recipe uses coconut milk instead of cream for a healthy, plant-based twist on the classic recipe, plus some extra spices like cinnamon and a tad bit of ginger for that ultimate fall taste!

3. Nourishing Lentil Soup

The Best Vegan Lentil Soup

This quick and easy recipe tastes amazing with a drizzle of your favorite hot sauce and a dollop of vegan sour cream! This soup is packed with plant-based protein, iron, fiber, and minerals, and is a fantastic addition to your weekly meal rotation.

This twist on the classic we all now and love makes the perfect vegan fall soup to cozy up with on a colder day! Chicken noodle soup was always something my parents would make when I was feeling a little under the weather, and it just brings back such cozy memories of childhood! This veganized version of chicken noodle soup is high in protein, fiber, vitamins, and minerals, without sacrificing any of the flavor.

5. Tortilla Soup with Quinoa

This tortilla soup is one of my go to vegan fall soup recipes when I want something that’s warm, comforting, and that comes together with little effort! It’s full of plant-based protein and sure to please even the most devout meat-eaters, so definitely try this one out!

6. Sweet Potato, Farro, and Chickpea Mediterranean Soup

This cozy vegan fall soup is absolutely delicious and perfect for colder fall and winter days! The nuttiness of the farro and chickpeas pairs so nicely with the sweet potato and it honestly feels like a warm hug in a bowl. And, for those of you wondering, farro is a grain like rice, and quinoa, but it more similar to barley than any of the other grains. It’s a high-protein, and high-fiber ingredient, making it perfect for a whole-foods plant-based diet or for those of you who are trying to eat a tad bit healthier!

7. Coconut Curry

This yummy and nourishing green coconut curry is the vegan fall soup recipe we never knew we needed! This curry soup is bursting with flavor and comes together in less than 20 minutes and is filled with veggies and plant-based protein. Especially for those of you who like to order this dish from restaurants or like foods with an asian flair, this one is a must-try!

8. Italian Minestrone

Minestrone is such a classic and delicious dish, it’s hard to find anyone who dislikes it, and this vegan version is no exception! It’s filled with veggies and plant-based protein, plus that filling and delicious addition of pasta that makes minestrone so iconic. It’s a perfect addition to your weekly meal rotation and perfect for those days when you crave a cozy vegan fall soup!

This flavorful and delicious soup tastes just like the kind of udon soup you’d find at a high end asian restaurant! It’s full of healthy veggies and fiber and uses few ingredients.
