Ingredients

  • 2 cups preferred plant-based milk (see notes section)
  • ΒΌ tsp salt
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder, sifted
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup
  • 1 medium banana, mashed
  • 1 cup old-fashioned rolled oats
  • 1 handful assorted fruit and berries to top (opt)

Instructions

  • Start by bringing the plant-based milk to a slow boil over high heat in a medium sized sauce-pan. Add in the salt, vanilla, cocoa powder, chia seeds, maple syrup, and banana, and stir everything to combine. Give the cocoa powder some time to dissolve and stir it until you no longer see any clumps of it. The liquid should still be boiling at this point.
  • Add in the rolled oats and stir it every couple seconds for 5 minutes. You should notice the oatmeal start to thicken up as the oats absorb more of the liquid. Once the 5 minutes have passed, turn off the heat and cover the saucepan with a lid to give them time to thicken even more for about 3 minutes, then serve and enjoy! I suggest topping this oatmeal with syrup, fresh fruit (like strawberries, blueberries, banana slices, etc), chocolate chips, a drizzle of nut butter, and/or some walnuts!
